Sweeeet Potato Patties

Thanks so much to our member of the week for submitting this grandkid friendly recipe -- another thing to do with all those sweet potatoes! 

3 cups mashed cooked sweet potatoes (baked and then mashed**)
1 cup shredded cheddar cheese (or combo of cheddar/monterey jack)
1 large egg
1/2 cup almond meal or bread crumbs
salt and pepper to taste

*you could also add 1/4 cup finely chopped chives or scallions, or, 1 tsp fresh chopped rosemary or 1 tsp cumin depending on  what flavor or how savory you wanted
**poke holes in sweet potatoes with a fork. Wrap in foil and  bake sweet potatoes at 375 degrees until tender. Cool and peel

For patties:
Mix all ingredients together well and form into patties

In a shallow dish, mix an additional 1/2 cup of almond meal or panko crumbs with salt and pepper (1/2 to 1 tsp)

Press the patties in the almond meal until coated on all sides and fry in coconut or olive oil about 4-7 minutes per side or until browned. Make sure there's enough oil to cover bottom of your pan and that it's hot enough to sizzle.

Serve with a dollop of Greek yogurt or sour cream, or, if you want sweet, with maple syrup.
