Salad Dressings
Need a way to spice up your salad greens? Try one of these salad dressings that we have collected over
the years!
Classic Vinaigrette Salad Dressing: Whisk 2 tablespoons red wine vinegar, 2 teaspoons dijon mustard,
1/2 teaspoon kosher salt, and pepper to taste. Gradually whisk in 1/3 to 1/2 cup olive oil.
Tangy Green Goddess Dressing
From EatingWell: April/May 2006
Makes: 1 3/4 cups | Active Time: 10 minutes | Total Time: 10 minutes
Ingredients:
• 1 avocado, peeled and pitted
• 1 1/2 cups fat-free buttermilk
• 1/4 cup fresh chopped herbs, (such as tarragon, sorrel, mint, parsley and/or cilantro)
• 2 tablespoons rice vinegar
• 1/2 teaspoon salt
Directions:
1. Place avocado, buttermilk, herbs, vinegar and salt in a blender and puree until smooth.
Soy-Ginger Dressing
Whisk together Soy-Ginger Dressing for your favorite salad greens, or use the dressing as a dipping
sauce for your favorite cabbage rolls. With only 5 ingredients, Soy-Ginger Dressing is as versatile as it is
delicious.
Yield: 1/2 cup (serving size: 2 tbsp.) Prep time: 5 Minutes
Ingredients:
• 1/3 cup soy sauce
• 3 tablespoons fresh lime juice
• 2 tablespoons rice vinegar
• 1 teaspoon freshly grated ginger
• 2 tablespoons vegetable oil
Directions:
In a small bowl, whisk together soy sauce, lime juice, vinegar and ginger. Slowly drizzle in oil in a steady
stream, whisking constantly. Cover and refrigerate. Whisk or shake well just before using.
Low-Fat Creamy Italian Salad Dressing

Ingredients:
• 1 cup low-fat sour cream
• 2 teaspoons red wine vinegar or white wine vinegar
• 2 teaspoons dry white wine
• 2 garlic cloves
• 3 teaspoons Italian seasoning
• 1 teaspoon Dijon mustard
• 1 teaspoon honey
• 1 teaspoon grated parmesan cheese
• 1 teaspoon olive oil
• 1/2 teaspoon black pepper
Directions:
1. In a blender or food processor, process all ingredients except sour cream until completely mixed.
2. Add sour cream and process just until mixed.
Homemade French Salad Dressing
A smooth, slightly spicy sweet red salad dressing
Yield: about 1 1/2 cups of dressing
Ingredients:
1/2 small onion (about 2 tablespoons)
1 clove garlic
1 teaspoon salt
1/4 cup sugar
1/4 cup vinegar
3/4 cup oil
1/2 cup ketchup
1/2 cup tomato pasta sauce 1/4 cup lemon juice
1 teaspoon paprika
Pinch cayenne pepper
Directions:
1. Place all ingredients in blender and blend on high until smooth. Serve over fresh salad greens.
Ina Garten’s Green Salad Vinaigrette
Ingredients:
• 1 teaspoon Dijon mustard
• 1 teaspoon minced fresh garlic
• 3 tablespoons champagne vinegar
• Kosher salt and freshly ground black pepper
• 1/2 cup good olive oil
• Salad greens or mesclun mix for 6 to 8 people
Directions:
In a small bowl, whisk together the mustard, garlic, vinegar, 1 teaspoon salt, and 1/2 teaspoon pepper.
While whisking, slowly add the olive oil until the vinaigrette is emulsified.
Place the salad greens in a medium bowl and add enough dressing to moisten. Sprinkle with a little extra
salt and pepper, if desired, and serve immediately.
Honey Balsamic Vinaigrette

Ingredients:
1/2 cup balsamic vinegar
1 small onion, chopped
1 tablespoon soy sauce
3 tablespoons honey 1 tablespoon white sugar
2 cloves garlic, minced
1/2 teaspoon crushed red pepper flakes
2/3 cup extra-virgin olive oil
Directions:
1. Place the vinegar, onion, soy sauce, honey, sugar, garlic, and red pepper flakes into a blender.
Puree on high, gradually adding the olive oil. Continue pureeing 2 minutes, or until thick.
Absolutely Fabulous Greek/House Dressing

"This is the 'secret' Greek dressing recipe from the pizzeria that I work at. It can be used for picnics and
travels very well, since it doesn't need to be refrigerated. This is the best dressing I have ever tasted,
people offer to buy it constantly, but if we sold it we wouldn't be able to make enough to use in the
restaurant!"
Ingredients:
3/4 cup olive oil
2 teaspoons garlic powder
2 teaspoons dried oregano
2 teaspoons dried basil
1-1/2 teaspoons pepper
1-1/2 teaspoons salt
1-1/2 teaspoons onion powder
1-1/2 teaspoons Dijon-style mustard
1 cup red wine vinegar
Directions:
1. In a container, mix together the olive oil, garlic powder, oregano, basil, pepper, salt, onion
powder, and Dijon-style mustard. Pour in the vinegar, and mix vigorously until well blended. Store
tightly covered at room temperature.
Fresh Tarragon Salad Dressing
Ingredients:
½ cup Italian parsley leaves, finely minced
3 tablespoon fresh tarragon leaves, finely minced
1 teaspoon fresh rosemary, finely chopped
3 tablespoons balsamic vinegar
1 tablespoon red wine vinegar
3 tablespoons extra virgin olive oil
1 garlic clove, crushed or grated
2 tablespoons Dijon mustard
½ teaspoon kosher salt
½ teaspoon black pepper, fresh ground
Directions:
Shake all of the ingredients together in a jar with a tight fitting lid. If you do not have a jar then first
whisk together all ingredients, adding the fresh herbs at the very end.
Toss the greens & the dressing in a large bowl, serve the salad on separate dish.
Makes enough to dress 4 side salads.
Zesty Fat Free Dressing
Ingredients:
1/2 cup fat-free plain yogurt
1/4 cup chili sauce
1 teaspoon steak sauce
1 teaspoon prepared horseradish
1/2 teaspoon Worcestershire sauce
1/8 teaspoon garlic powder
Directions:
In a small bowl, whisk all ingredients. Chill for at least 30 minutes before serving.
Smoked Paprika Vinaigrette

Ingredients:
1/2 cup red wine vinegar
1/3 cup honey
1 tablespoon stone-ground mustard
1 tablespoon lime juice
3/4 teaspoon ground black pepper
3/4 teaspoon salt
1 1/4 teaspoons smoked paprika
1 clove garlic
2 tablespoons chopped onion
1/4 teaspoon oregano
1 pinch white sugar (optional)
1/2 cup olive oil
Directions:
Blend the red wine vinegar, honey, mustard, lime juice, pepper, salt, paprika, garlic, onion, oregano, and
sugar together in a blender until thoroughly mixed. Drizzle the olive oil into the mixture while blending
on low. Chill at least 1 hour before serving.
Parmesan Vinaigrette From The EatingWell Healthy in a Hurry Cookbook (2006)
Makes: 4 servings | Active Time: 10 minutes | Total Time: 10 minutes
Ingredients:
• 1/3 cup freshly grated Parmesan cheese
• 3 tablespoons extra-virgin olive oil
• 2 tablespoons white-wine vinegar
• 1/2 teaspoon finely chopped garlic
• 1/2 teaspoon Dijon mustard
• Salt & freshly ground pepper, to taste
• 8 cups mixed salad greens
Directions:
1. Whisk together Parmesan, oil, vinegar, garlic and mustard. Season with salt and freshly ground
pepper. Toss with salad greens.
Orange-Walnut Vinaigrette From EatingWell: March/April 2011
Ingredients:
• 1/3 cup walnut oil
• 1/3 cup orange juice
• 1 tablespoon red-wine vinegar
• 1 clove garlic, minced
• 1 teaspoon freshly grated orange zest
• 1 teaspoon reduced-sodium soy sauce
• 1/4 teaspoon salt
• 1/4 teaspoon freshly round pepper
Directions:
Place oil, orange juice, vinegar, garlic, orange zest, soy sauce, salt and pepper in a bowl or a jar with a
tight-fitting lid; whisk or shake until well combined. Try with a salad of bitter greens.
Healthy Dijon-Yogurt Dressing

Ingredients:
1 cup 2% Greek yogurt
3-4 tbsp grainy or smooth dijon mustard (adjust to taste)
1 pinch very finely chopped garlic
1/4 teaspoon cayenne
juice of one lemon
salt and pepper
Directions:
Combine all and whisk together by hand.
Add water or skim milk as needed to thin consistency.
